Una "cavity" es una caries, pero en el párrafo inmediato anterior hablan de "tooth decay" (Fluoride is an excellent preventative against tooth decay), que también es una caries. Hay alguna manera de diferenciarlo? "Rellenar una cavidad" me parece muy literal, pero puedo estar equivocada.

: Sí, "obturación" u "obturación dental". De todas formas, "empaste" también es correcto y tiene un uso más generalizado, por lo que quizás sea el término más indicado para los destinatarios de este texto.
