シュイティン/シュティン

Another option.

If you go with Wikipedia, シュイティン would be the proper katakana.
http://ja.wikipedia.org/wiki/Wikipedia:外来語表記法/中国語

However, that is probably more for Chinese learners, and シュイ seems a bit silly otherwise, so シュティン may be better. This is what you'll find used by the katakana converter at:
http://dokochina.com/katakana.php

If this is not simply the family name, but the full name, you may want to use シュ・ティン so that it is can't be misunderstood as Stein, Sten, etc.

Regarding the use of シュイ, I did find a couple of examples:
許晴(シュイ・チン
http://ja.wikipedia.org/wiki/許晴
朱旭(チュウ・シュイ、Zhu xu
http://ja.wikipedia.org/wiki/朱旭

Also found シュー (tone is different):
徐静蕾(シュー・ジンレイ)
http://ja.wikipedia.org/wiki/徐静蕾

Here is an example for Ting:
サミュエル・ティン(Samuel C. C. Ting

Peer comment(s):

agree Mami Yamaguchi : Based on the Phonetic Notation of Chinese, 'ting' is 「ティン」, and 「ティ」 and 「チ」should be differentiated between.

Thanks, Mami. I agree - to me チン would be qin.

シュチン

シュチン Do you have the kanji?
Peer comment(s):

agree Chrisso (X) : http://translate.google.com/#zh-CN/en/旭霆

neutral Nathan Takase : I don't understand Chrisso's link. That would be キョクテイ in katakana, despite the Chinese pronunciation matching the question. I posted my answer because I think normally チン would be qin or qing.
