Hi,

I seem to remember eating these in Greece at Easter.

I imagine the plural γαρδούμια is probably more natural, but I'm quoting the word in the singular as there are a few instances of it on the Web.

It's "γαρδούμπα" or "γαρδουμπάκια", I think...

It seems that this recipe has different names, depending on each region of Greece. It is mostly known as Γαρδούμπα, η (Gardouba, the; in sing.), where as people usually use this expression in plural when they refer to this [Γαρδούμπες, οι: Gardoubes, the; in pl.), γαδουμπάκια,τα ('small' gardoubes)]; in some regions, this recipe is called γαρδούμι (gardoumi, in sing.) or γαρδούμια,τα (gardoumia, in pl).
According to the following explanation, it consists of innards of a lamb (liver, sweetbreads, lungs) twined and tied in a knot with lamb guts dredged with much pepper, origan, oil and lemon in the oven or barbecue.

Finally, it seems the term of Gardouba is a loan from Latin.

Πέρισυ το Πάσχα τα δοκίμασα και λύσαξα από τα 100 κιλά αλάτι που έριξε καταλάθος η Σεφ:). BTW, λέγονται γαρδούμι ή γαρδούμια στην Κρήτη, αλλά περιμένω επιβεβαίωση από κανα Κρητικολόγο.....
