I think I would rewrite as follows;
Also what impressed me straight away is how much (she/he) treasures relationships that come into (his/her) life no matter how small, and how delicately (she/he) responds to them with deep, merciful affection.
And, what impressed me straight away is how much (she/he) treasures a relationship no matter how small, that comes into (her/his) life. And how delicately (she/he) responds to them with deep affectionate mercy.
